Carbonic fermentation with Pineapple.

The coffee cherries are selectively hand-picked by trained and skilled laborers, making sure only ripe cherries are picked. They are then screened twice to ensure the standard of the cherries and the floats are completely skimmed off. Then the pineapple is added. The coffee cherries are sealed tightly. After which carbon dioxide is flushed inside. The coffee cherries are fermented in a carbon dioxide-rich environment, absence of oxygen for 72 hours.
